Carol Byrd-Bredbenner, PhD, RD, FAND

Carol Byrd-Bredbenner, Ph.D., R.D., F.A.N.D., is Professor of Nutrition/Extension Specialist in the Nutritional Sciences Department at Rutgers, The State University of New Jersey where she teaches a wide range of undergraduate and graduate nutrition courses. Dr. Byrd-Bredbenner has authored numerous nutrition books, including the college level textbook Wardlaw’s Perspectives in Nutrition, 8th Edition; middle school textbook Adventures in Food and Nutrition; a cookbook highlighting New Jersey produce, Fresh Tastes from the Garden State. She has published over 100 articles in journals, magazines, and newsletters. She recently directed two major social marketing campaigns: Ask Before You Eat/Know Before You Serve food allergy campaign targeted at restaurateurs, school nurses, and parents and Food Safety for Young Adults.


Jacqueline Berning, PhD, RD, CSSD

Jackie Berning’s expertise is in sports nutrition and teaching students and athletes how to make wise food choices for increased performance. She has worked extensively with collegiate athletes at the University of Colorado (Boulder) where she consulted for more than 20 years. In addition to the University Athletic program she was the nutrition consultant for the Denver Broncos for over 25 years, where her role was to teach young football players the importance of nutrition. She has also worked as the sport dietitian for the Cleveland Indians and Colorado Rockies. She received her Ph.D. in Nutrition from Colorado State University in Ft. Collins, Colorado. She is Professor at the University of Colorado at Colorado Springs, where she teaches nutrition in the Biology Department in the College of Letters, Arts and Sciences.
